Raw Peanut Butter Cookies


 I have been feeling really inspired and motivated lately. I read a lot of vegan food blogs and in the past few weeks, I've just suddenly felt ready to take the next step and get serious about my blogging and photography. I recently bought a new lens for my camera and this weekend I decided to buy a tripod and some new photo-editing software. I've been casually putting content up on this blog for a few years now, but now I finally feel ready to commit to the blogging world and become a "real" blogger.


These delicious raw cookies have been something I have been wanting to share with the world for a really long time. I keep a binder of all my blog ideas and this recipe has been at the top of my list for quite some time.

Raw Peanut Butter Cookies

1 cup almonds
1 cup dates
1/2 cup peanut butter (I use creamy, salted, unsweetened)
2 tablespoons maple syrup
1 teaspoon vanilla extract  
  1. In a food processor, grind up the almonds as finely as you can. (see picture below for example)
  2. Add dates and pulse for a few seconds, then add peanut butter and pulse a few more times.
  3. Add the rest of the ingredients and run the food processor until everything is well-mixed together and becomes a crumbly, doughy blob. 
  4. Using your hands, form small cookie patties. Alternatively, pour and press into some kind of container and cut into squares. Cookies should be kept in the refrigerator when not being gobbled.
