I made this sweet potato-lentil stew tonight with my boyfriend. We make stew from scratch almost every week and this is one of our favorite recipes. It is super easy to make and sooooo delicious. Just throw some vegetables in a big pot, add vegetable broth and lentils, bring to a boil, and then let it simmer for about 40 minutes. I found this recipe in Alicia Silverstone's book, The Kind Diet. Most importantly...it's vegan of course!
