Pad Thai and African Kale and Yam Soup


Hey guys, so one thing I want to do with this blog is to work through cookbooks and tell you all how it goes. So I've been making a ton of recipes from The Happy Herbivore, and all I can say is AMAZING! Last night I made the Pad Thai recipe. It was great, though I did make a few small changes. I added fresh veggies to it (peas, green beans, carrots, red bell pepper, and broccoli). I was also not quite satisfied with the sauce. I think that a little less peanut butter and maybe a pinch of raw sugar to make it a hint sweeter would have been better. That's just my opinion. Besides those few modifications it was a fantastic dish and very easy to make.

Tonight I made the African Kale and Yam Soup. It was delicious! I had thought about adding lentils to it, but decided to try the original recipe first. It turned out to be perfect just the way it was. I loved this soup! I don't think that it should have been called African Soup though. I am very close to someone who grew up in Africa and he was slightly offended by this name. He didn't understand what ingredient in this soup would make it African or "ethnic" as the book describes this recipe as. Other than that, this soup was absolutely incredible!!! I will definitely be making this again soon.
